Buffalo Chicken Hawaiian Roll Sliders

Buffalo chicken sliders are perfect for any party or tailgate! Combines that classic Buffalo hot sauce flavor with ranch and shredded chicken, then placed on a sweet Hawaiian roll with pepper jack cheese and topped with melted butter and ranch seasoning.

Ingredients for the Buffalo Chicken Sliders Recipe

Sprinkling pepper jack cheese on Buffalo pulled chicken sliders.

The ingredients for this Buffalo chicken sliders recipe are as follows:

  • Hawaiian rolls – a 12-pack of sweet Hawaiian rolls to be the canvas you create this masterpiece on
  • Shredded chicken – can use either leftover smoked chicken or a rotisserie chicken from the store; white meat preferred
  • Buffalo hot sauce – provides the spice, along with some tangy flavor
  • Ranch dressing – what’s Buffalo chicken without ranch (or blue cheese) to tame it down and add another element of flavor?
  • BBQ seasoning – a seasoning with some heat is preferred
  • Pepper Jack cheese – this is basically Monterrey Jack cheese with peppers; adds another creamy salty flavor with a touch of spice
  • Melted butter – for topping the slider rolls and helping your ranch seasoning stick to the tops
  • Ranch seasoning (optional) – adds more ranch flavor

Prepping the Buffalo Chicken Sliders

Mixing Buffalo hot sauce with chicken in a mixing bowl.

To prep the Buffalo chicken ranch sliders, start by taking a 12-pack of King’s Hawaiian rolls and slicing down the middle, creating a top and bottom. Place the bottom portion into a greased foil pan or onto a baking sheet.

Next, grab a medium-sized mixing bowl and put in three cups of shredded chicken (you can use rotisserie chicken for these Buffalo chicken sliders). Then pour in a three-fourths cup of Buffalo hot sauce, half cup of ranch, and two tablespoons of seasoning. Mix the ingredients with a spatula, tongs, or using your hands with food-grade nitrile gloves.

Pour sauced Buffalo chicken mixture onto bottom portion of Hawaiian rolls. Sprinkle two cups of shredded pepper jack cheese on top before topping with the upper portion of rolls.

How Long to Cook Buffalo Chicken Hawaiian Roll Sliders

With the Buffalo chicken Hawaiian roll sliders assembled and the tops brushed with melted butter (and topped with ranch seasoning), it’s time to place them on the grill.

Cook for 15 minutes at 350 degrees over indirect heat. Ideal smoking woods or pellets would be hickory or apple. Once done on the grill, remove, break or slice into individual rolls, and serve!

Cheesesteak Sliders Ingredients

The ingredient list for this cheesesteak slider recipe is pretty simple:

  • Shaved Ribeye steak – ribeye is tender and flavorful. Slice into very thin pieces at home or have it shaved by the butcher. Some places will have shaved ribeye pre-packaged.
  • Onion – white onion cooked up on the griddle is fundamental to any cheesesteak
  • Provolone cheese – classic Philly cheesesteak sandwiches are topped with this melty cheese
  • Green bell pepper – adds some crunch with subtle flavors of bitterness and sweet
  • Mushrooms – sliced white mushrooms add extra umami flavor
  • Seasoning – with steak involved, a salt, pepper, garlic powder-based seasoning is ideal

Why Not Call These Philly Cheesesteak Sliders?

Cheesesteak sliders ready for eating.

A classic Philly cheesesteak consists of shaved beef steak, sliced onion, and Provolone cheese all cooked up on a griddle and served on a hoagie roll. People from the Philadelphia area are very passionate about their Philly cheesesteaks and will be quick to tell you that peppers and mushrooms don’t belong. However, some Philadelphians will swap out Provolone for Cheez Whiz.

This recipe is more of a cheesesteak that most of us outside of the Philadelphia region are used to. Out of respect to the Philly cheesesteak, this slider post is referred to as a cheesesteak sliders recipe.

Prepping the Vegetables

Onions, bell peppers, and mushrooms seasoned and cooking on the griddle.

Slice the green bell peppers and 3/4 onion julienne. To slice “julienne” means long, thin slices. This is ideal for cheesesteak as it cooks faster and the size is perfect. I prefer to have more onion than green bell pepper slices. You can find sliced white mushrooms at most grocery stores or supermarkets, but feel free to cut them into even smaller pieces if you wish.

Combine the vegetables into a bowl and season with salt and pepper. Set aside.

Tips for Slicing Ribeye Steak for Cheesesteaks

Thinly sliced ribeye for cheesesteaks.

Slicing ribeye steaks for cheesesteaks is easy if you have a sharp knife and a cold steak. The reason I say a “cold steak” is because it’s more firm and easier to slice than one with a mushy texture. Pro tip, place the steak in the freezer for 10 minutes prior to slicing to ensure a more firm steak to slice.

A sharp blade will also make thin slices more attainable. The sharper the blade, the easier it will be to slice thin shavings of steak. I recommend sharpening or honing your knife prior to doing this.

If you aren’t up for slicing this yourself, some butchers will slice the steak in their meat slicer upon request. Also, some supermarkets will sell beef shaved steak pre-packaged so you can skip the slicing altogether.

Cooking Cheesesteaks on the Griddle

Shaved beef steak for beefsteaks cooking on the griddle.

With the Blackstone griddle at medium heat, start cooking the onion, green bell pepper, and mushrooms first. The vegetables will take longer to cook than the steak. Spread the vegetables into a single layer on the griddle for more even cooking. Cook for five to seven minutes, flipping halfway through.

On a separate part of the griddle, add the shaved steak and season with salt and pepper. Cook the steak pieces for just over one minute on each side. Combine the meat and veggies together in a square-like shape to fit the size of tray of Hawaiian roll slider buns.

Speaking of, take your pack of slider buns and place the inside portions on the griddle for 30 to 60 seconds to toast them. This will provide a nice touch of extra flavor to the Hawaiian roll cheesesteak sliders.

The Best Cheese for Cheesesteaks

Hawaiian roll cheesesteak sliders cooking on the Blackstone griddle.

Which cheese is best for cheesesteaks? Provolone cheese is the most popular and the one I prefer. Cheez Whiz or Velveeta is another popular option. I’ve also seen people use cream cheese and mix it in with the meat and veggies.

Each of these will bring a different flavor to the cheesesteaks, but don’t feel confined to being limited to these three options. You can even try American, Swiss, or Havarti. Ultimately, the best cheese for cheesesteak is up to personal preference.

Serving the Hawaiian Roll Cheesesteak Sliders

Hawaiian roll sliders assembled in the tray.

With the cheese melted on top of the meat and veggies, as well as the slider buns toasted, scoop up the meat and veggies (and cheese) from underneath with your griddle spatula and scoop nicely onto the bottom buns. Using two spatulas to pick it up all at once is preferable.

Place the upper portion of the buns on top and serve! You can either cut the sliders individually to cut the meat and veggies into perfectly sized sliders or simply pull the sliders apart from each other.

Step up your slider game with these Hawaiian roll cheesesteak sliders! Thin slices of ribeye combined with onions, bell peppers, and mushrooms on the griddle, topped with melty provolone cheese.

Ingredients

  • 16 oz, ribeye steak, shaved
  • 1 green bell pepper, sliced julienne
  • 3/4 onion, sliced julienne
  • 1 Cup sliced mushrooms
  • 6 slices provolone cheese
  • 1 Tbsp salt
  • 1/2 Tbsp pepper
  • 1 pack of King's Hawaiian slider buns (9-pack)

Instructions

  1. Preheat griddle to medium heat with avocado oil.
  2. Thinly slice ribeye steak with a sharp knife. Season ribeye with salt and pepper.
  3. Slice green bell pepper and onion into long, thin slices (aka- julienne). Combine in a bowl with pre-sliced mushrooms and season with salt and pepper.
  4. Cook vegetables on griddle for 5 to 7 minutes. Should be starting to soften at this point.
  5. Place shaved ribeye peices on griddle separate from vegetables and cook for 1 to 2 minutes on each side.
  6. Combine both the meat and veggies and mix them both. Condense the meat and veggies into a square size similar to the tray of Hawaiian roll slider buns. Top with slices of provolone cheese.
  7. Toast the Hawaiian roll slider buns on griddle for 30 to 60 seconds. Place bottom portion of buns back in tray from the package. Scoop up the cheesesteak ingredients evenly onto bottom buns. Place top portion of slider buns on and serve.

Notes

1. Top buns with melted butter and parsley flakes for additional flavor and visual appeal.

2. Some grocery stores sell shaved steak pre-packaged. Buying it this way will save you from having to thinly slice it yourself. Also, some butchers will shave the ribeye steak in their meat slicer upon request.

Smoky Ham and Cheese Sliders

Ham and cheese sliders are a smashing success in my home. Both the picky little eaters and adults alike love it! Ham and Cheese Sliders Video

What do I Need for this Easy Ham and Cheese Sliders Recipe?

For this easy Hawaiian rolls sliders recipe, you’ll need Hawaiian rolls, ham, Swiss cheese, butter, dijon mustard, salt, pepper, dried onion flakes and parsley flakes. Oh, and a 9×11″ foil pan to put it all in.

The ingredients for the recipe.
The main ingredients for these sliders.

How to Put the Hawaiian Rolls Sliders Together

Start out by getting your grill ready to be at 350 degrees over indirect heat. I like to use hickory wood, but feel free to use whichever smoking wood you like. Using a 12-pack of King’s Hawaiian rolls, take them out of the package and keep them all in piece (this is how they come). Take a bread knife and slice the rolls in half as if you’re making one big sandwich (because you kind of are). Keep the bread knife handy because you’ll need it again. Next, take a half pound of sliced ham and lay them on the bottom half of the sliced rolls. then pile on a half pound of Swiss cheese on top of that. Top the cheese with the top half of the rolls.

Now that the ham and cheese sliders are mostly assembled, it’s time to create the mixture to spread on top! In a small bowl, melt 1/4 Cup of butter (also known as 1/2 stick of butter or 4 Tbsp). In this same bowl, pour in 1 Tablespoon of dijon mustard, a teaspoon of Worcestershire sauce, and a half teaspoon each of salt and pepper. Mix ingredients together in the bowl. Then take a food brush (or basting brush) and brush all over the tops of the rolls, including sides. To top off the sliders (for now), take a couple of teaspoons of dried onion flakes and sprinkle them on, making sure each roll top is covered. Carefully pick up the sliders, keeping them all in one piece, and place in foil pan.

How Long To Cook These Ham and Swiss Sliders

With the ham and Swiss sliders in the foil pan, place them on the grill at 350 degrees for 15 minutes. The tops will get a little brown and you will see the cheese melt down the sides. Once cooked, remove from the grill and let sit for a minute to allow the pan to cool. Take a spatula and scoop out the ham and Swiss sliders (still in one piece) onto a cutting board.

Take a picture quick before they disappear!

Melt an extra tablespoon of butter and use a food brush to dab the tops of the sliders. If you brush, then you will knock off the onion flakes baked into the tops of the rolls. Now that they are lightly buttered, sprinkle parsley flakes lightly on the tops of the Hawaiian rolls sliders.

Slicing the Hawaiian Ham Sandwiches

Remember the bread knife I said to keep handy? Now is the time to use it again. Slice the rolls into 12 individual sliders. These savory (and mildly sweet) Hawaiian ham sandwiches will be eye-popping and I won’t judge you if you want to take pictures. Just get those pics in quickly before your family and guests come for them!

  • 1 tsp parsley flakes

Instructions
