Brisket Breakfast Skillet Recipe

A wise man once said, “there has never been a sadness that can’t be cured by breakfast food”. That man was Ron Swanson, the fictitious TV character from Parks & Recreation. Since breakfast food and barbecue are two of my most favorite types of food, this quote speaks to me. What else speaks to me is combining leftover brisket and breakfast food together. Let’s break down this brisket breakfast skillet recipe, shall we?

Breakfast Ingredients, All in One Pan

The beauty of this brisket breakfast recipe is that you can cook it all in one pan, which means one or two less pans to wash afterward. I cook this outside in a cast iron skillet on my Aspire by Hestan grill. I start by sautéing onions and minced garlic with butter and a little avocado oil. Soon after, I throw on some diced red bell peppers and sliced jalapeño. Once that has been cooked to my liking, a pour these ingredients into a separate bowl.

Next come the potatoes. You can use either frozen shredded potatoes or cubed ones, but if you have leftover baked potatoes, even better. Dice up the baked potatoes into small cubes and fry in the pan, getting some nice crisp on at least one or two of the sides.

After you get some crispy sides to the potatoes, add in the leftover brisket and some cut up pieces of bacon. Now pour the ingredients from the bowl back into the cast iron skillet and mix together. To bring this breakfast skillet recipe altogether, make three divots in the food in the skillet for the eggs. Crack eggs, placing one in each divot. These eggs will take a little longer to cook as they won’t be completely on the skillet surface. It will help to cover the top with a lid. After a few minutes, sprinkle the top of the breakfast skillet with cheese. Remove from grill once cheese is melted and eggs are cooked to your liking. Sprinkle diced cilantro on top and serve.

To be honest, my kids were reluctant to eat this (they wanted pancakes and scrambled eggs). But once they did, this leftover brisket recipe won them over! Now this breakfast dish can be had whenever we have leftover brisket in the fridge. Or if there is a sadness that breakfast food needs to cure.

Breakfast Skillet Recipe with Brisket

This breakfast skillet recipe with leftover brisket can be cooked all in the same pan! Perfect for breakfast, lunch, or dinner.

Ingredients

  • 2 Cups brisket, cut into 1-inch pieces
  • 3 strips bacon, cut into 1-inch pieces
  • 3 Cups potatoes, baked and cubed into 1-inch pieces
  • 1/2 Cup white onion, diced
  • 1 clove garlic, minced
  • 1/4 cup of red bell peppers, diced
  • 1/4 cup of jalapeno, sliced
  • 1 Cup cheddar cheese, shredded
  • 1 Tbsp avocado oil
  • 1 Tbsp butter
  • 1 Tbsp seasoning
  • Diced cilantro to taste

Instructions

  1. Preheat grill or stove to 350 degrees. In a cast iron skillet warm up avocado oil and butter. Cook onions, red bell peppers, then garlic and jalapeno in same skillet. Cook until sauteed. Scoop ingredients into a bowl for later use, keeping grease in skillet.
  2. Place potatoes in skillet, cooking to when they get a little crust. Dump in brisket and bacon pieces. Cook for a few minutes. Bring ingredients from bowl back into the skillet. Sprinkle on seasoning. Mix altogether, creating three divots in the skillet of ingredients.
  3. Crack eggs, placing one in each of the three divots. Cover with a lid and cook for about five minutes or until eggs are done to your liking. Sprinkle shredded cheese on top. Remove from grill when cheese is melted. Sprinkle cilantro on top. Serve.

Notes

  1. Substitute frozen hash brown or country style potatoes for baked potatoes.
  2. Can be cooked over a grill or stove top.
  3. To add a little more spice, mix in shredded pepper jack cheese.

Note: it is recommended you have a pizza peel and a pizza stone for this recipe.

Got Leftover Pork?

The typical pork butt or pork shoulder weighs 5-7 pounds. When you’re cooking for family or a small gathering, this usually means there will be leftover pulled pork. Great thing about leftover pulled pork is that it reheats very well. You can put the leftovers in your freezer, reheat it months later and still get great flavor..

Making that BBQ Pulled Pork Pizza

Cut the pizza into six slices. Or eight if you like smaller portions of pizza.

To start making your BBQ pizza, you’ll obviously need pizza dough. You can buy premade pizza dough at your local grocery store, even Trader Joe’s, or make your own at home (my buddy Kamado Bjorn has a good recipe). Before working with your ball of pizza dough, spread some flour over the surface you’ll be prepping on. This will help keep the pizza dough from sticking.

Put the ball of dough on the surface and press from the center and spread out on all sides. I usually will pick up the dough after doing this and stretch the sides out a little at a time. If you don’t make a perfect round, that’s okay (I rarely do).

With your pizza dough flat and rounded, drizzle on some of your favorite BBQ sauce. Use a spoon or silicone spatula to smooth it all around, leaving an inch from the edges uncovered for the crust. Next, sprinkle on the shredded mozzarella cheese. For a 12″ pizza, I use about a cup. Then sprinkle on 3/4 Cup of pulled pork, spreading all around. Finally, take a red onion and make some large slices to place around the pizza.

How many slices can you take down?

With your pizza all put together, use your pizza peel to transfer to the grill. Put flour on your peel to help it not stick. With your grill at 400 degrees, put the BBQ pizza on the preheated pizza stone (heat up grill with pizza stone inside). This way will take 15-18 minutes to cook. You can tell its done by how the cheese is melted and browning a little.

If you are using an outdoor pizza oven, cook at 700 degrees for 4-5 minutes, rotating once during the cook. Remove from the grill and wait a few minutes before slicing. During this wait time, I recommend sprinkling some cilantro on top.

Can you cook this BBQ pizza in your oven?

Absolutely! But I enjoy cooking them on the grill. And I think you will too!

Pulled Pork Pizza Recipe!

BBQ Pulled Pork Pizza (leftover pork recipe)

Yield: Eight slices
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients

  • 1 ball of pizza dough (about 250g)
  • 1/2 Cup BBQ sauce
  • 1 Cup shredded mozzarella cheese
  • 3/4 Cup pulled pork
  • 1/4 Cup red onion, long strips
  • 2 tsp cilantro, chopped

Instructions

  1. Preheat grill and pizza stone to 400 degrees.
  2. Take ball of pizza dough and flatten with hands, spreading out evenly. Poke with fork to avoid bubbling while cooking. Spread BBQ sauce on flattened dough about an inch to the edges. Brushing edges with olive oil is optional. Sprinkle on shredded mozzarella, then pulled pork, and finally the chopped red onion.
  3. Season pizza peel with flour and place uncooked pizza on it. Transfer to pizza stone on grill and cook for 15 minutes or until cheese is golden brown. Remove from pizza stone and sprinkle on chopped cilantro. Cut into six slices.

Notes

1. Brushing olive oil on crust of pizza before cooking is optional, but would add some flavor.

2. The type of BBQ sauce used will affect the sugar and calorie content.

3. You can also cook this in a pizza oven at 700 degrees for 4-5 minutes, rotating once.

Smoked Ham with Cinnamon Apricot Glaze

This Smoked Ham Recipe Looks Familiar…

The first part of this recipe mirrors that of the twice smoked ham recipe on this blog. The big differ here is the cinnamon apricot glaze.

Begin prep by getting your grill up to 225 degrees with cherry wood over indirect heat. As you wait for the grill temp to rise, remove the ham from the packaging. Place ham in a 9×11” foil pan and apply two tablespoons of rub on the meat. Place ham in foil pan on grill and smoked for two hours.

Adding More Flavor

After the ham has been getting cherry smoke for two hours, it’s time to add some more flavor! Pour a half cup of teriyaki sauce all over the ham. Next, pour a cup of Dr Pepper. Because… it’s Dr Pepper and it goes great with BBQ. Finally, pour a cup of orange juice on top for a little citrus flavor.

Wrap the ham with aluminum foil, pinching it to the sides of the foil pan. Close lid and increase temp to 275 degrees. Cook like this for another two hours or until internal temp reaches 140 degrees. This can be measured with a digital thermometer like the Thermapen ONE Remove when this happens and go get that glaze ready!

Getting Glazed

I have another smoked ham recipe on my blog that features a different type of glaze. While I fancy that one quite a bit, my family LOVES this cinnamon apricot glaze even more!

For the glaze, start by taking a medium saucepan and melting a stick of salted butter at medium-low heat. As that melts, dump in a half cup of dark brown sugar, 1/2 teaspoon cinnamon and 1/8 teaspoon nutmeg. Stir until fully blended. Next, pour in 1/2 teaspoon of vanilla. Finally, fill a 3/4 measuring cup full of apricot preserves and dump in. Mix it all together until the mixture comes to a bubbling simmer.

Now that the apricot glaze is done, time to pour it over that ham! It’s mesmerizing to watch the hot glaze cascading down the ham.

As tempting as it would be to eat it as-is, we’re not done yet! You’ll want the glaze to cook onto the smoked ham. You can do this by using the broiler in your oven for 3-5 minutes. But if you have a food torch, use that instead until the apricot glaze gets cooked onto the ham. The torch process should only take about a minute.

Even if you overcook the ham, this glaze has got your back. Those you cook for will rave about that sweet apricot flavor and how it pairs well with the smoked ham!

Smoked Ham with Cinnamon Apricot Glaze

Prep Time: 10 minutes
Cook Time: 4 hours
Total Time: 4 hours 10 minutes

FACT: Smoked ham is awesome. FACT: adding a cinnamon apricot glaze makes it even better! Follow this recipe and make the magic happen.

Ingredients

  • 1 pre-cooked, spiral cut ham (about 10 lbs.)
  • 2 Tablespoons of rub/seasoning of your choice
  • 1/2 Cup teriyaki sauce
  • 1 Cup orange juice
  • 1 Cup Dr Pepper
  • FOR GLAZE
  • 1/2 Cup butter
  • 1/2 Cup dark brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla
  • 3/4 Cup apricot preserves

Instructions

  1. Preheat grill to 225 degrees with cherry wood over indirect heat. Remove pre-cooked ham from packaging and apply rub. Put ham in foil pan and place on grill for two hours.
  2. While on the grill, pour teriyaki sauce, orange, juice, and Dr Pepper on ham, allowing juices to sit in pan. Wrap foil over ham and around edges of foil pan. Turn up heat to 275 degrees and cook until internal temp for ham reaches internal temp of 140 degrees. Remove from grill and drain juices.
  3. In small saucepan over medium-low heat, melt stick of butter and add dark brown sugar, cinnamon, and nutmeg. Stir. Add vanilla and apricot preserves. Stir and simmer until contents are bubbling. Remove and pour over ham.
  4. Caramelize the glaze by either broiling for 3-5 minutes or using food torch for 1-2 minutes. Slice and serve.
