Making the Buffalo Chicken Dip Recipe

Buffalo chicken dip ingredients mixed together.

Making this smoked Buffalo chicken dip recipe is super simple! Start by getting a medium sized mixing bowl and putting in two cups of shredded chicken, BBQ seasoning, half cup of Buffalo hot sauce, and a half cup of ranch dressing. Add in an 8 ounce brick of cream cheese, half cup of shredded cheddar cheese, and can of Rotel. Mix with a large spoon or spatula until the ingredients are well integrated.

Add some more heat to this recipe by putting in a hot sauce with the heat level you desire. I like to use FYR hot sauces for their variety in flavors and heat levels. I advise to go with either GLD or RED. With that said, if there’s a hot sauce you love, then use it!

Cooking the Smoked Buffalo Chicken Dip

Cast iron skillet full of smoked Buffalo chicken dip on the grill.

Put the mixed ingredients into either an 8×8 pan or a 10″ cast iron skillet and top with more shredded cheddar cheese. Place on the preheated grill at 350 degrees over indirect heat and cook for 20 minutes.

Regarding smoking woods, I prefer to use a hard wood such as hickory or oak. Either of these will impart a stronger smoke flavor than fruit woods and compliments the buffalo dip ingredients quite well.

Remove from the grill and serve immediately! If the spice level isn’t as hot as you wanted, you can always add more hot sauce and stir. If it happens to be too spicy, add more softened cream cheese and stir.

What to Serve with Smoked Buffalo Chicken Dip

Tortilla chip dipped into Buffalo chicken dip.

This buffalo wing dip goes pair well with tortilla chips, crackers, and naan bread. When it comes to vegetables, carrots and celery are perfect for dipping as these veggies are staples with buffalo hot wings.

How Long is the Buffalo Wing Dip Good For?

If this dip hasn’t been eaten up at your tailgate or party, you can store this Buffalo wing dip in an airtight container and store in the refrigerator for up to four days.

Want More Smoke Flavor in Your Buffalo Wing Dip?

To intensify the smoke flavor in your Buffalo wing dip, use either smoked chicken (either fresh or leftovers from a previous cook) or smoked cream cheese. For the smoked cream cheese, simply follow the smoking instructions in this smoked cream cheese recipe, just don’t add the pepper jelly.

Smoked Queso Dip

Smoked Queso Dip

This smoked queso dip recipe is the ultimate party dip your chips can’t stay away from! Easy to follow instructions for the best dip you’ll ever make!

What Goes Into this Smoked Queso Dip Recipe?

This smoked queso dip recipe consists of eight ingredients and only takes an hour to make. For this dip, you will need the following:

  • Velveeta cheese
  • Cream cheese
  • Ground sausage
  • Rotel (diced tomatoes and green chiles)
  • Tomato
  • Green bell pepper
  • Garlic
  • Seasoning

How to Make It on the Grill

Mixing the ingredients of the queso dip while on the grill.

To begin, preheat grill to 250 degrees over indirect heat with hickory wood. This can be done on a pellet grill, offset, charcoal, or even a gas grill. Now brown one pound of ground sausage in a skillet and apply the seasoning during this time.

In a 9×11″ foil pan, add a 32 oz. block of Velveeta cheese, cooked ground sausage, and an 8 oz. block of cream cheese. Next, add two cans of Rotel diced tomatoes and green chiles. Make sure to drain the juice from the cans prior. Put in one diced tomato and 1/2 of a diced green bell pepper. Finally, add three cloves of minced garlic. If using a jar of minced garlic, that would be 3 teaspoons.

With all the ingredients in the foil pan, take out to the grill and let smoke for one hour. Stir once or twice during the process to blend ingredients together. Remove from grill and serve immediately.

How to Make this Queso Dip Spicier

Chip full of dip.

This Velveeta queso dip recipe already has a little bit of spice to it, thanks to the Rotel. Wanna kick it up a notch? Substitute the 1/2 green bell pepper for a couple of jalapenos. Another substitution would be either hot pork sausage or chorizo in place of the regular pork sausage.

Want a Smoked Queso Dip Recipe with Less Fat (but still great taste)?

You can still achieve an addicting cheese dip flavor with some healthier substitutions. Use Neufchatel cheese in place of cream cheese? What is Neufchatel cheese? It’s basically cream cheese with 1/3 less fat. It sits right next to the blocks of cream cheese at the grocery store and pretty much tastes the same.

Another substitution that will make this dip less fatty and have less cholesterol is to use ground turkey instead of pork. To be honest, very few will be able to taste the difference (especially since you will season it).

Is This the Same as Rotel Dip?

Rotel dip is typically a three-ingredient dip, consisting of Rotel, Velveeta, and ground beef. Also known as Velveeta Rotel dip, or sausage dip, it’s also made in a skillet. This smoked queso dip recipe differs as there are more ingredients, uses ground pork sausage (instead of beef), and gets a unique smoke flavor from the grill. Both are good, but I think one is better. Can you guess which one?

How Long is Smoked Queso Dip Good For?

When stored properly in an airtight container, this Velveeta queso dip will be good for up to three days. Make sure to warm back up in the microwave for at least 30 seconds.

What Can I Serve with This Easy Queso Recipe?

While tortilla chips are ideal for dipping into the smoked queso dip, you can also dip pretzels, bagel chips, Naan bread, and vegetables. This versatile dip also is great for topping tacos and putting in burritos as well.

If you’re looking for another easy Mexican dip, try queso fundido! It also makes for a great topping to other Mexican foods, including taco salad!
