Let’s dive into this quick and easy recipe!

Cookie Recipe Ingredients

This smoked chocolate chip cookie recipe calls for 11 ingredients and some super easy steps. First things first, preheat the grill to 375 degrees using indirect heat. As far as smoke flavor goes, I like to use a blend of hickory and pecan.

Note: If you don’t have a grill or don’t feel like going outside in the elements, you can easily make these inside in the oven.

In a medium or large-sized mixing bowl, combine 1/2 cup of softened butter (1 stick), 1/2 cup of sugar, and a 1/4 cup of brown sugar. Mix these ingredients with a baking spatula or wooden spoon (or use a mixer like I do) until you can’t see the yellow of the butter. Next, add one egg and a teaspoon of vanilla and mix some more until the ingredients look like a cream.

The Dough Is Made!

Now that the ingredients you’ve used so far have formed a cream-like texture, add in 1 1/4 cups of flour, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. Mix these ingredients in and the dough will form fairly quickly. Once this is done, add in 2/3 cup of milk chocolate chips and 2/3 cup of caramel sea salt baking chips and mix into dough.

Making the Chocolate Chip and Caramel Sea Salt Smoked Cookies

Now that the dough is made, ball up pieces of dough into roughly the size of a golf ball. Place balls of dough on a cookie sheet, preferably lined with parchment paper to keep cookies from sticking. The typical cookie sheet should fit 12 cookies.

How Long Should I Bake Chocolate Chip Cookies?

Place cookie sheet on the grill (or oven) for 8-10 minutes. The cookies will likely look a little gooey on top, but this is perfect. Cook any longer and the bottoms could be getting burnt. Check with a flipping spatula to gently lift cookie up and take a peek at the desired brownness. Once they are done, remove from grill.

Don’t Forget the Sea Salt Flakes!

Immediately after removing from the grill, sprinkle sea salt flakes on top of each cookie. I like to pinch some in my fingers and sprinkle on that way. These sea salt flakes give the perfect balance to the sweetness of the cookie and help bring out the salt flavor of the caramel baking chips.

Where Can I Buy Caramel Sea Salt Baking Chips?

The only place I’ve seen caramel sea salt baking chips is at Trader Joe’s and they’re seasonal, popping up only during the holidays. You could substitute caramel chips, especially since you’re using sea salt flakes on top for this cookie recipe.

How Many Cookies Does This Recipe Make?

Following the directions, this recipe makes 24 chocolate chip and caramel sea salt baking cookies.

Is This Considered a Christmas Cookie Recipe?

I came up with the idea during the Christmas season, so they can pass for Christmas cookies. Also, the sea salt caramel chips are seasonal at Trader Joe’s, so that helps the holiday cause.

Can I Make This Cookie Recipe in the Oven?

Absolutely! You won’t get the hint of smoke flavor from the grill, but you’ll still have some incredible cookies!

Ingredients

  • 1/2 Cup butter, softened
  • 1/2 Cup sugar
  • 1/4 Cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/4 Cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 Cup chocolate chips
  • 2/3 Cup sea salt caramel chips
  • 1 Tbsp sea salt flakes

Instructions

  1. Preheat grill to 375 degrees over indirect heat with a blend of hickory and pecan wood.
  2. In a medium or large sized mixing bowl, combine softened butter, sugar, and brown sugar and mix well.
  3. Add one egg and vanilla and mix some more. Ingredients in bowl should look creamy at this point.
  4. Add flour, baking soda, and salt and mix well until a dough forms. Once this is done, add chocolate chips and sea salt caramel chips and mix until they are integrated well together.
  5. Ball up pieces of dough to roughly the size of a golf ball and place on a cookie sheet (12 should fit perfectly).
  6. Place in grill for 8-10 minutes. Remove from grill and immediately sprinkle sea salt flakes on. Let cookies cool a few minutes to cool and solidify before eating.

Notes

  1. This recipe can be made in the oven.
  2. If sea salt flakes aren't available, kosher salt can be substituted.
  3. Sea salt caramel baking chips can only be found seasonally at Trader Joe’s. Substitute caramel chips as needed.
  4. Use a cookie sheet that will be dedicated for use on the grill as the bottom of the sheet will be discolored.
  5. Line cookie sheet with parchment paper for easier removal.

With this grilled peaches recipe, making dessert on the grill has never been easier! Peaches are in peak season in the summer, and using the grill is the perfect place to go. To make this recipe, all you need are four ingredients and five minutes to make peach dreams come true!

Two Minutes of Prep

This grilled peaches recipe is very simple. To start, preheat the grill to 400 degrees using direct heat on either a gas grill or over charcoal (or wood). While you wait for the grill to heat up is the best time to start slicing the peaches. Slice the peaches in half and remove the pit. If the peach is ripe, you will be able to pull the pit out with ease. Set them on a cutting board and take out to the grill.

Place the sliced peaches face down on the grill grates. They are done when they have nice, dark grill marks on their surfaces. It will take up to two minutes to finish. Remove from grill and place face up on a cutting board.

Finishing Touches for Grilled Peaches

Now that the peaches have been grilled, it’s time to bust out the toppings! Sprinkle some brown sugar on the tops of the peaches, which is best done soon after they come off the grill. This way, the brown sugar starts to melt into the juicy, grilled peaches. Next, time to drizzle the caramel syrup over the tops. I love using Ghirardelli sea salt caramel sauce because it provides a slight touch of savory to this sweet dessert.

Top this off with ice cream and the perfect summer dessert from your grill is ready to eat! And it only takes five minutes.

  1. Preheat grill to 400 degrees over direct heat. Slice peaches in half and remove pits.
  2. Place peaches face down on grill for 1-2 minutes. Remove from grill, sprinkle brown sugar and drizzle sea salt caramel sauce on top. Serve with ice cream.

Notes

  1. This recipe is best done when peaches are in season, but can be done whenever you can find them at the store.
  2. I prefer vanilla bean ice cream from Tillamook, but use whichever flavor (or brand) you like.

Smoked Candied Pecan Pie

Why does pecan pie taste so good? It is due to the blend of sweet and buttery flavors that go into the pie itself. Ingredients like brown sugar, light corn syrup, and vanilla combine well with melted butter and salt (among other ingredients). In this smoked pecan pie recipe, we use smoked candied pecans and a secret ingredient. Keep reading or scroll down to the recipe card for the details!

Smoked Pecan Pie

As you may recall, I have a recipe for smoked candied pecans here on the website. It’s my second favorite way to eat pecans. My #1 favorite way is to take those smoked candied pecans and make a pecan pie!

To make this pie, take a medium-sized mixing bowl and combining a cup of brown sugar and 1/4 cup sugar. Next add 1.5 teaspoon vanilla, 1/2 teaspoon corn starch, 1/2 teaspoon salt, and 3/4 cup light corn syrup. Also, mix in a stick of melted butter and three beaten eggs.

The Special Ingredient

Next comes a unique ingredient: orange zest. Only grate in a half teaspoon. That small amount will bring the perfect, subtle diverse flavor. When grating the orange, it is important to know you get the best zest from the immediate surface of the peel. Beyond that surface, the peel starts to get more tart. So if you want some tart to the pie, then keep grating in the same spot. Mix altogether in mixing bowl.

Getting the Pecan Pie Together

Now that you’re at the point where we put it all together. Start by lightly greasing a pie tin or pie pan. Line the pie crust in the pie tin and put half of the smoked candied pecans in. Pour your mixture from the mixing bowl in next and then evenly sprinkle the remaining pecans on top.

Wrap the top of the pie in aluminum foil and put on the preheated grill at 350 degrees over indirect heat. For smoke flavor, go with hickory wood. After 30 minutes, remove foil from top and keep on grill for another 25 minutes. You can tell it’s done when you tap the side of the pie and it has a little jiggle to it. If this is the case, remove and let rest until pie is cooled to room temp.

This pie is great for holidays, weekends, late nights, basically anytime! Eat up and make sure to share with friends, family. Or not.

Ingredients

  • 1 Cup brown sugar
  • 1/4 Cup granulated sugar
  • 1 1/2 teaspoon vanilla
  • 1/2 teaspoon corn starch
  • 1/2 teaspoon orange zest
  • 1/2 teaspoon salt
  • 3/4 Cup light corn syrup
  • 1/2 cup butter (aka- 1 stick), melted
  • 3 eggs, beaten
  • 1 1/2 Cups smoked candied pecans
  • 1 pie crust

Instructions

    1. Preheat grill to 350 degrees over indrect heat, using hickory wood. Take a medium mixing bowl and put in brown sugar, granulated sugar, vanilla, corn starch, orange zest, salt, light corn syrup, melted butter, and three eggs. Stir ingredients together.

    2. Lightly grease a pie pan and put your rolled out pie crust in. Make sure pie crust conforms to the pie tin. Take half of pecans and sprinkle onto pie crust in pie pan. Pour ingredients from mixing bowl into pie pan, then evenly sprinkle remaining pecans on top.

    3. Cover pie in foil and put on the grill. After 30 minutes, remove foil and cook for another 25 minutes. Remove from grill and let cool to room temperature before serving.

Notes

  • When zesting the orange, start at one spot and zest lightly on the surface, spiraling around the orange. The reason for this is you get the best zest from the outmost part of the peel. Going further into the peel in one spot makes the zest more tart.
  • Corn startch helps thicken the pie’s consistency.
  • When baking the pie, you can tell it is done by giving the side of the pie tin a tap and watching how it moves. If it sloshes around, it needs more time. If it jiggles just a little bit, then it’s done.
