What Apples are Best for Apple Pie?
Granny Smith apples have a tart flavor that is ideal for apple pie recipes. Other apples that have a good balance of tart with sweet for apple pies are honeycrisp, gold delicious, Jonagolds, and Braeburns. Granny Smith is the most popular and easiest to find, but the others work great, too. These types of apples are also great for desserts such as apple crisps, tarts, and galettes.
Getting Started with the Smoked Apple Pie
Before prepping the pie, get your grill to 425 degrees over indirect heat. I like to use a blend of hickory and cherry woods for this. By the time you’re done prepping the pie, the grill should be at temp and ready to use.
How Many Apples Should I Use for Apple Pie?
How many apples to use depends on the size of the apple and how thinly you cut the slices. Granny Smith apples typically come in a medium size. I use five Granny Smith apples and cut each of them into 16 slices with my apple corer and slicer. Set slices aside in a large bowl or leave on the cutting board.
Before you core and slice, make sure you peel the apples. If you don’t have a dedicated apple peeler, you can use a potato peeler. Leaving the skin on the apple will make it unpleasant to bite into as you and your guests may be chewing through random tough, thin pieces in the pie.
Apple Pie Filling Recipe
In a large bowl, mix one cup of sugar, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/8 teaspoon salt, and three tablespoons of cornstarch. The corn starch will help thicken the pie filling when the dry ingredients combine with the juicy apples.
Make sure to mix these dry ingredients well as you don’t want to have clumps of corn starch or cinnamon in certain spots. It will make the flavor of the apple pie filling inconsistent throughout the pie.
Once the dry ingredients are mixed altogether, dump in the sliced apples and stir with a large wooden spoon. As you stir the apple pie filling ingredients, the natural juices from the apple will combine with the sugar, cinnamon, nutmeg, and corn starch and you’ll see the pie filling take shape.
How About the Pie Crust?
If you have a homemade pie crust recipe, then by all means use it! I’m not a baker and haven’t explored making my own pie crust yet, so I use the store bought pie crust.
If using premade pie crust, I highly recommend pulling them out about 15-20 minutes beforehand. Doing this will make them softer and easier to unroll.
Assembling the Smoked Apple Pie
This is where all of the apple pie ingredients come together! Grease a 9″ pie tin and lay one pie crust in the pie tin, gently forming a mold to the inside of it. Next, spoon in your pie filling and distribute evenly. Next, top the apple pie with the other sheet of pie crust.
Pinch the outer ends of the pie crusts together to keep the apple pie filling from leaking out. You can use a fork or even press down with your thumbs all around the outer rim of the pie. Trim off any excess of pie crust from the edge of the pie tin.
Cut a few slits in the top layer of pie crust to create vents for the apple pie. This allows steam from the pie filling to escape and prevents the crust from puffing up while the apples shrink during the cook.
Stay Golden by Using the Egg Wash
Finally, create an egg wash and brush over the pie crust. Doing this will give the pie crust a more golden appearance when it’s finished baking. Create an egg wash by combining one egg and 1/4 teaspoon of water in a small bowl and mixing.
Use a basting brush to spread evenly. Note that you won’t use the entire bowl of egg wash, but just enough to lightly coat the pie crust.
How Long to Cook the Apple Pie
Now that the pie has been made, place it on the grill and let it cook for 40 to 45 minutes. The pie will be done when you can poke the apples smoothly with a fork. Poke the apples you can see through the slits in the pie.
When the smoked apple pie is done cooking, remove from the grill and place on a cooling rack. I let the pie cool for at least one hour before eating.
What to Serve with Apple Pie
Smoked apple pie goes perfectly with ice cream! I love vanilla ice cream with a warm apple pie. It’s as comforting as a dessert can get! Whipped cream also goes very well with it, too.
How Long is Apple Pie Good For?
Apple pie is good for three to four days after it is cooked when wrapped and stored on your kitchen counter. It will be good up to a week when stored in the refrigerator.
